Berry sorbet


Cuisine Italian
Main ingredients Black berries, Raspberries,




Ingredients 3 cups Blueberries ,or blackberries
3 cups Raspberries ,or strawberries
2 cups Water
1 1/2 cups Sugar
1-2 tbsp Lemon Juice




Directions
In a medium pan, add black berries, raspberries and 1 cup water. Heat over medium heat and bring to boil. Reduce heat and simmer for 5 minutes.
Strain mixture through a fine sieve and press on sieve with the back of a spoon. Return mixture to a clean pan.
Add remaining water, sugar and lemon juice. Heat over low heat until sugar dissolves stirring constantly. Remove from heat and leave to cool.
Move mixture to a metal container and cover with plastic wrap or waxed paper. Freeze for 2 hours.
In a bowl, beat egg whites with electric beater until glossy. With a metal spoon, add egg whites to berry mixture and stir to mix well. Return metal container to freezer, cover and freeze for another 2 hours.
Transfer mixture to a bowl. Beat with an electric beater then return to metal container, cover and freeze again. Repeat this process again then freeze until firm.
