I'm an american citizen; my fiancee is a chinese citizen. given that we fulfill the conditions stipulated here (letters of no objection from embassies, etc.): http://www.usembassy.egnet.net/consular/marriage.htm
can we marry in cairo? (we will both be on student visas there) just based upon that website it looks ok.. but i dont know if there is an assumption that one person from the couple is an egyptian national...
ideas?

No there is no assumption that one of you is an Egyptian and as long as you both do all the things required by the embassy/ministry of justice then it is fine.
I have heard that the formalities can take a couple of days so be prepared for that.
