Finely chop 2 large tomatoes Finely chop half large cucumber Finely chop one spring onion or shallot Add juice of one lime, tablespoon vinegar, teasp salt, black pepper, tablespoon olive oil, tablespoon of finely chopped parsley and chive. Stir up in a glass serving bowl and eat immediately.
