fry 1 finely chopped onion in olive oil with garlic, salt and pepper. Add lentils that have been soaking overnight, cover with stock, cook on a low heat for 10 minutes. Add chopped fresh parsley, stir in 1 small pot of fresh cream (or fromage frais for a low fat version). Add spices, such as cumin, cayenne pepper or coriander if desired.
(sorry I dont exact measurements, I tend to make things up as I go along).
eat with a chunk of wholemeal or granary bread
