8 chicken portions or 2 whole chickens 1 kg skinned tomatoes chopped in quarters 3 sliced red peppers 1 sliced green pepper 2 hot chillis sedded and sliced 2 tablespoons tomato paste 1/2 cup finely chopped olives ( green ) juice of 2 limes 6 crushed black peppercorns 6 sliced cloves garlic 2 tablespoons of harissa paste ( optional) cup fresh chopped basil or tablespoon dried water
Place everything in a large pot and bring to boil. Simmer gently on a medium heat till chicken falls from bones.
