Egypt has a plentiful amount of bananas this time of year and so I make a lot of this cake, cut it up into small pieces and serve it with tea, lovely for the evenings, enjoy!
BANANA CAKE
INGREDIENTS 2 1/2 cups all-purpose flour 1 tablespoon baking soda 1 pinch salt 1/2 cup butter 1 cup white sugar 3/4 cup light brown sugar 2 eggs 4 ripe bananas, mashed 2/3 cup buttermilk 1/2 cup chopped walnuts (optional)
DIRECTIONS Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 - 8 inch round pans. In a small bowl, whisk together flour, soda and salt; set aside.
In a large bowl, cream butter, white sugar and brown sugar until light and fluffy. Beat in eggs, one at a time. Mix in the bananas. Add flour mixture alternately with the buttermilk to the creamed mixture. Stir in chopped walnuts(if you want them).
Pour batter into the prepared pans. Bake in the preheated oven for 30 minutes. Remove from oven, and place on a damp tea towel to cool.
side note: If you want it extra sweet, make your own frosting/icing and smother the top of the cake with it, adds quite the sweet kick!

Sounds great Smuckers, but question. The bananas here are very small, are you sure you only use 4 of them for this recipe?

I normally use 2 - 2 1/2 cups for my recipes. 4 or 5 bananas for here. Mine were the same in Egypt that I get here. But I guess that's like anywhere. Different areas have different things.
