TUNA SALAD (SALVADOREAN)

2 8 oz. tuna in water
1 large tomato, minced
1 small white onion, chopped
3 tablespoons chopped cilantro
1 jalapeno pepper, diced (no seeds)
4 tablespoons mayonnaise
2 tsp lime juice

Drain tuna, mix all ingredients. Serve with crackers and cheese.

CRANBERRY TUNA SALAD

Salt and pepper to taste
Salad dressing
1 pkg. raspberry gelatin
2 c. cranberry juice

Mix together tuna, eggs, celery, olives, onions, cashews, salt, pepper and enough salad dressing to moisten. (Do not make mixture too wet.) Pack firmly into fish (or other) large mold. Mix together gelatin and hot cranberry juice. When slightly thickened, pour over salad and refrigerate until set. Unmold and serve surrounded by greens. Serves 10.
Note: 1 1/2 cups cooked chicken or turkey, flaked, may be substituted for tuna fish.

1/2 c. celery, sliced (some of celery leaves also)
1/4 c. green pepper, sliced
1/4 c. sweet pickle relish
1/2 c. mayonnaise or salad dressing
1/4 c. lemon juice

Cook macaroni, drain. Add tuna and vegetables. Mix mayonnaise and lemon juice; stir into salad mixture. Chill at least 2 hours. Decorate with hard boiled egg slices.

so I decided to make tuna salad sandwiches for dinner (feeling lazy) and thought to add a couple of side dishes and of course, thought of all of you! I wanted to be sure to share, here are my ideas:

 -

Ginger-Glazed Carrots
2 Tbsp butter or margarine
2 large carrots, diagonally sliced
2 Tbsp firmly packed brown sugar
Pinch ground ginger

In skillet, melt butter over medium heat and cook carrots, stirring occasionally, 5 minutes or until crisp-tender.
Stir in brown sugar and ginger.
Cook, stirring frequently, 5 minutes or until carrots are tender and sauce is thickened.
