12 ounces good-quality tuna, packed in oil, drained
2 stalks celery, halved lengthwise and thinly sliced
1 apple, peeled, cored, and cut into 1/4-inch pieces
3 tablespoons light mayonnaise
2 tablespoons freshly chopped basil leaves
1 tablespoon freshly squeezed lemon juice
Coarse salt and freshly ground pepper
8 slices best-quality sourdough (or whatever you prefer)
1. In a medium bowl, combine tuna, celery, apple, mayonnaise, basil, and lemon juice; mix well. Season with salt and pepper.
2. On a work surface, divide tuna salad among 4 slices bread; top with remaining 4 slices bread. Serve.

2 8 oz. tuna in water 1 large tomato, minced 1 small white onion, chopped 3 tablespoons chopped cilantro 1 jalapeno pepper, diced (no seeds) 4 tablespoons mayonnaise 2 tsp lime juice
Drain tuna, mix all ingredients. Serve with crackers and cheese.
CRANBERRY TUNA SALAD
1 1/2 c. flaked tuna 2 chopped hard-cooked eggs 1 c. finely cut celery 1/2 c. cut stuffed olives 1 tbsp. minced onion 1 c. coarsely cut cashews Salt and pepper to taste Salad dressing 1 pkg. raspberry gelatin 2 c. cranberry juice
Mix together tuna, eggs, celery, olives, onions, cashews, salt, pepper and enough salad dressing to moisten. (Do not make mixture too wet.) Pack firmly into fish (or other) large mold. Mix together gelatin and hot cranberry juice. When slightly thickened, pour over salad and refrigerate until set. Unmold and serve surrounded by greens. Serves 10. Note: 1 1/2 cups cooked chicken or turkey, flaked, may be substituted for tuna fish.
TUNA SALAD
2 c. elbow macaroni 3 c. tuna fish 1/2 c. sliced scallions 1/2 c. celery, sliced (some of celery leaves also) 1/4 c. green pepper, sliced 1/4 c. sweet pickle relish 1/2 c. mayonnaise or salad dressing 1/4 c. lemon juice
Cook macaroni, drain. Add tuna and vegetables. Mix mayonnaise and lemon juice; stir into salad mixture. Chill at least 2 hours. Decorate with hard boiled egg slices.
TUNA SALAD LETTUCE WRAP
1 1/2 tsp classic Ceasar Salad dressing 1/2 can of tuna 2 baby carrots, chopped 2 lettuce leaves 3 olives 1/2 roma tomato 1/2 tsp each garlic powder 1/2 tsp basil leaves 1/2 tsp ground black pepper 1/2 tsp salt
In a small bowl, combine tuna, chopped carrot, olives, and tomato. Chop one of the lettuce leaves and add. Spinkle with remaining spices, salad dressing, then mix thoroughly.
Using the other lettuce leaf, place tuna salad in tne center, and then fold and enjoy.

yummm your tuna lettuce wrap sounds great, I'm a great tuna lover but have really hardly eaten it since being pregnant...I will keep your lettuce wrap recipe for after this trial

so I decided to make tuna salad sandwiches for dinner (feeling lazy) and thought to add a couple of side dishes and of course, thought of all of you! I wanted to be sure to share, here are my ideas:
Ginger-Glazed Carrots 2 Tbsp butter or margarine 2 large carrots, diagonally sliced 2 Tbsp firmly packed brown sugar Pinch ground ginger
In skillet, melt butter over medium heat and cook carrots, stirring occasionally, 5 minutes or until crisp-tender. Stir in brown sugar and ginger. Cook, stirring frequently, 5 minutes or until carrots are tender and sauce is thickened.
