I'm Filipino, but I love this. I got it from a Lebanese cookbook
i) Bring to boil (in beef or chicken stock, 3 cups for every 1 cup of beans) 3 metric cups dried beans, and boil for 2 minutes. Turn fire off and leave pot (and covered) for an hour
(Or, you may soak the beans overnight)
ii) Bring to boil and then simmer until tender
While beans are cooking, beat together
a. half a cup each of vinegar(or lemon juice) and olive oil b. chilli(optional) and black pepper to taste c. salt to taste(1 teaspoon is good) d. 2-3 cloves of garlic chopped up finely
iii) Drain beans, and then while still hot, mix very gently with the vinegar mixture above
iv) Serve with Lebanese bread
Perfect for breakfast! Oh heck, I'd have it any time of the day
