Spicy Shrimp Machboos

ingredients

1 kg shrimps, shells and veins removed
...2 cups rice, washed
4 cloves garlic, crushed
1 onion, chopped
2 tomatoes, peeled and cut into small cubes
1 tablespoon parsley, chopped
2 tablespoons bunch of coriander, chopped
4 tablespoons vegetable oil
1 teaspoon baharat spices
1 pinch red hot chili powder
1 teaspoon turmeric
2 teaspoons salt
black pepper to taste
cooking method

1. In a saucepan, fry the shrimps and garlic in oil over low heat until the shrimps change color. Take out from the saucepan and reserve.

2. In the same saucepan, cook the onions until soft then add in the chopped parsley, coriander, tomatoes, baharat spices, red hot chili, turmeric, salt and pepper along with 2 cups of water and bring to a boil.

3. When the mixture begins to boil cover thw saucepan and lower the heat.

4. Let simmer for few minutes, stir in the rice, and let it boil. Then simmer, with the lid on for 10 minutes, adding more water if needed.

5. Slowly, mix in the shrimps so they do not break into pieces, cook with lid on for 20 more minutes.

6. Remove from heat and keep the saucepan covered for 5 minutes so the shrimps can finish cooking. Serve warm.

baharat spices ? cinnamon..? not sure
anyone work with this?

Baharat is a spice blend, and since the dish (Machboos) is a khaleeji one (Gulf) recipe the spice blend would want is Khaleeji:

Black Pepper
Ground coriander
Nutmeg
Cloves
Saffron
Cinnamon
Cumin
Ground Cardamom

The amount of each spice varies but the spices above are the core spices the constitute khaleej baharat.


Here is a link with various baharat. The one you want is the Gulf:

Baharat
2 tbsp fresh ground black pepper
2 tbsp paprika
2 tbsp ground cumin
1 tbsp ground coriander
1 tbsp ground cloves
1 tsp nutmeg
1 tsp ground cinnamon
1/2 tsp ground cardamom

Turkish Baharat
2 tbsp fresh ground black pepper
2 tbsp ground cumin
1 tbsp ground coriander
1 tbsp ground mint
1 tbsp ground cloves
1 tsp nutmeg
1/2 tsp ground cardamom
pinch of ground cinnamon

Levant Baharat
1/4 cup black peppercorns
1/4 cup allspice berries

Syrian Baharat
2 tsp allspice
1 tbsp cinnamon
1 1/2 tsp nutmeg
1 1/2 tsp cloves

Tunisian Baharat
1 tsp ground cinnamon
1 tsp dried rose petals
1 tsp black pepper

Kebsa spices (i.e. Gulf baharat)
1 tbsp red pepper
1 1/2 tsp cumin
1 1/2 tsp cinnamon
1 1/2 tsp ground loomi (dried lime)
1 tsp cloves
1 tsp black pepper
1 tsp ground cardamom
1 tsp nutmeg
1 tsp ground coriander
1/2 tsp saffron threads
