spicy Malaysian Recipe for Grilled Chicken with Spicy Peanut Sauce INGREDIENTS
* 4 chicken breast fillets * 6 small fresh ginger (unpeeled) * 1/4 cup chicken broth * 1/4 tsp red pepper flakes * 1 tsp brown sugar * 1 tbsp sesame oil * 2 cloves garlic (peeled) * 4 scallions (sliced) * 1/3 cup peanut butter (smooth or crunchy) * 5 tbsp soy sauce
To prepare:
* Mince ginger and garlic in food processor * Add scallions, pulse so to become fine chop * In a shallow dish, combine this mixture and 3 tbsp of soy sauce and oil * Add chicken, turn to coat completely * Cover and marinate in fridge for 20 mins to 1 hour * In a small bowl, combine peanut butter, broth and remaining 2 tbsp soy sauce, red pepper flakes and sugar * Set aside * Grill chicken till done * Serve with peanut sauce and steamed veggies of your choice
