Raita ( cucumber dip )

Large tub Greek yoghourt
quarter of a large cucumber
quarter teasp chilli powder
half teasp salt

Place yoghourt in a glass bowl. Peel the cucumber and dice finely.
Add cucumber, chilli, and salt to the bowl and mix. Leave in fridge for one hour before serving.
Place thin slices of cucumber on top of raita for decoration.

necro, if you want to sweat the cuke before you use it, it will add less water to the dish.
I do this whenever I use cucumber in salads or dips, like fattoush or whatever.
Just dice the cucumber, lay it in a single layer on paper towels or cotton kitchen towels and lightly salt it. Leave it for 15 minutes and it will be ready.
This is especially important if you plan to make enough for leftovers.
