500grm dry pasta twists or shells
1/4 cup olive oil
3 chopped anchovy fillets
1/2 cup of seeded and chopped green or kalamata olives
medium can of peeled tomatoes
2 tablespoons tomato paste
4 cloves crushed garlic
tablespoon dried oregano or basil or handful of either fresh and chopped
dash of hot pepper sauce or a pinch of chilli powder
black pepper
tablespoon parsley
parmesan cheese

Cook and drain pasta

Place oil, garlic. and tomato paste in non stick pan and fry paste, and garlic in the oil. Be careful not to burn garlic!! If you do discard and start again.
Add canned tomatoes, and anchovy fillets finely chopped and cook for 5 mins.
Add rest of ingredients and simmer for 5 mins then pour over hot cooked pasta.
Garnish with fresh parsley and parmesan cheese.
