simmer your beef in some water with the bay leaf. in the oven, cook whole eggplants till they are very tender. in the beef add, the onions, tomatoes, peppers, cumin and a very small pinch of cinnamon. remove the bay leaf. take the eggplants from the oven and peel them. place the pulp inside a blender or food proc. and add 1 small carton of cream. blend together and keep warm.
when ready to eat, pour the white eggplant sauce over the beef and serve with jasmine rice.
