Cajun Potatoes and Onions

Ingredients:
1/4 cup olive oil
2 large onions, thinly sliced (about 5 cups)
4 russet baking potatoes, peeled, quartered and thinly sliced (6 cups)
1 tablespoon Cajun Seasoning , divided
1 can (14 1/2 ounces) chicken broth

Directions:
1. Preheat oven to 375°F. Heat oil in large skillet on medium-high heat. Add onions; cook and stir 5 to 10 minutes or until lightly browned.

2. Place half the potatoes in even layer in greased 12x8-inch baking dish. Sprinkle with 1 1/2 teaspoons Cajun seasoning. Top with a layer of half of the onions. Repeat layers of potatoes, onions and remaining Seasoning. Pour broth over top.

3. Bake 45 to 50 minutes or until potatoes are softened. Let stand 5 minutes before serving.
