A party fit for a queen... throw the tastiest street celebration in town with these delicious nibbles

Serves 4

Mini shepherd's pies

INGREDIENTS
6 medium potatoes, peeled and chopped
1 large onion, sliced
2 cloves garlic, sliced
2tbsp olive oil
500g (1lb 2oz) Welsh lamb mince
1tsp ground cumin
1tsp smoked paprika
6tbsp tomato purée
2-3tbsp Worcestershire sauce
5tbsp tomato ketchup
50g (1¾oz) salted butter (plus extra for topping)
6tbsp chopped parsley
50g (1¾oz) grated mild Cheddar cheese
2tbsp cream

METHOD
1 Preheat the oven to 190°C/fan 170°C/gas 5. Boil the potatoes for 20 minutes. Stir-fry the onion and garlic in the oil for 5 minutes. Add the lamb, increase the heat and fry
until brown. Stir in the cumin, paprika, tomato purée, Worcestershire sauce and ketchup. Season, then simmer for 20-25 minutes.

2 Drain the potatoes, and mash with the butter, parsley, cheese and cream.

3 Spoon the mince into 4 ovenproof ramekins, then top with the mash. Dot with extra butter, then bake for 20-25 minutes or until golden.

hahaha Shepherds pie for royalty... I now see we have a council house dosser who thinks eating pizza with a knife and fork is posh [Wink]
