IRISH POTATOES

1 lb. 10X sugar
1 c. coconut
5 tbsp. butter, softened
1/3 c. white Karo
1 tsp. vanilla
Cinnamon

Knead together coconut and butter. Add remaining ingredients, and mix well. Chill. Roll into small balls and roll in cinnamon. Chill 1/2 hour or until firm. Store in refrigerator. A St. Patrick's Day tradition!

Karo is a sweet syrup (as in karo syrup) . . and 1 pound of sugar???? . . . lol, these are very sweet "potatoes".

I didn't know that St. Patrick had such a sweet tooth.

these are candies girls, the karo is a corn syrup, and it makes them so creamy. they are very buttery tasting and delicious , and this recipe make a lot of candies
